Marinated Tomatoes

  • 2 tbsps. fresh thyme
  • 1/4 cup fresh basil, chopped and extra for garnish
  • 3 large tomatoes, sliced about 1/4 inch
  • 250 mL mini bocconcini cheese, sliced
  • Fresh grated parmesan cheese (optional)
  • 1/4 - 1/3 cup Feige's Oil and Vinegar


  • Place sliced tomatoes in single layer and evenly sprinkle both sides with fresh herbs and salt and pepper.
  • Cover and let stand for one hour in the fridge.
  • Drain any juice and top with bocconcini and parmesan.
  • Drizzle with Feige's Oil and Vinegar and garnish with more basil.
