Marinated Tomatoes

A simple, herb infused classic!
Course Appetizer, Side Dish
- 2 tbsps. fresh thyme
- 1/4 cup fresh basil, chopped and extra for garnish
- 3 large tomatoes, sliced about 1/4 inch
- 250 mL mini bocconcini cheese, sliced
- Fresh grated parmesan cheese (optional)
- 1/4 - 1/3 cup Feige's Oil and Vinegar
Place sliced tomatoes in single layer and evenly sprinkle both sides with fresh herbs and salt and pepper.
Cover and let stand for one hour in the fridge.
Drain any juice and top with bocconcini and parmesan.
Drizzle with Feige's Oil and Vinegar and garnish with more basil.
