Sheet pan Gnocchi

Ingredients

  • 1-2 tbsp Olive Oil
  • 500 g Store bought gnocchi
  • 1 Large Zucchini, quartered and sliced
  • 2 Peppers, diced
  • 250 g Cherry tomatoes, halved
  • 3 Shallots, sliced
  • 5 Garlic cloves, thinly sliced
  • 1/4 Cup Feiges Maple Balsamic & Garlic dressing
  • 1 Lemon, halved
  • Salt & Pepper
  • 100 g Goat cheese
  • 1/2 Cup Herbs (mint, parsley, basil or dill)

Instructions

  • Preheat oven to 450F
    Drizzle large sheet pan with olive oil, addgnocchi, zucchini, pepper, half of the cherry tomatoes, shallots and garlic
    Cover gnocchi and vegetables with dressing, juicefrom half of a lemon, salt and pepper.
    Toss together until coated evenly.
    Sprinkle goat cheese over top
    Bake for 30 Minutes until vegetables are roasted
    Broil for a minute or two to crisp up gnocchi
    Sprinkle herbs, reserved tomatoes and more lemonjuice over gnocchi
    Serve immediately
