Salmon Plank with Mediterranean Toppings

Fresh, bold and full of flavor
- 1 salmon filet, deboned and skinned
- 1 cup chopped onion
- 2 tbsps. Feige's Sunflower Oil
- 3 large minced garlic cloves
- 28 ounce stewed tomatoes
- 3/4 cup black olives (in water)
- 1/4 cup Feige's Oil and Vinegar
- 1/3 cup feta cheese
- Salt and pepper to taste
Sauté onions with Feige's Sunflower Oil on medium heat for about 10 minutes, add minced garlic.
Stir in tomatoes, salt and pepper and continue cooking until the juice is evaporated and fairly dry.
Add olives and Feige's Oil and Vinegar.
Spread on top of cooked salmon and crumble feta over top.
Sprinkle salt and pepper on salmon and place on foil lined cookie sheet.
Bake at 350 for about 20 minutes.
