1tspfreshly cracked black pepper
1tsp salt, to taste
Instructions
Prepare the marinadeIn a small bowl, combine Feige’s Honey Mustard & Poppy Seed Dressing, minced garlic, rosemary, thyme, salt and pepper. Mix well.
Marinate the roastPat the prime rib dry with paper towels. Rub the dressing mixture generously over the entire roast, coating all sides.Place in a covered dish or sealed container and refrigerate for at least 4 hours, preferably overnight, to allow the flavours to develop.
Bring to room temperatureRemove the roast from the refrigerator approximately 1 hour before cooking. Allow it to come closer to room temperature for more even cooking.
Preheat the oven to 450°F (230°C).
Place the roast, fat side up, on a rack in a roasting pan. Reserve any excess marinade that has not touched raw meat.
Roast uncovered at 450°F for 15 minutes to develop a beautiful golden crust.Reduce the oven temperature to 325°F (165°C) and continue roasting until the desired internal temperature is reached.Approximate cooking times will vary depending on the size of the roast. Use a meat thermometer for the best results.
