
Sauteed Gnocchi with Veggies & Goat Cheese
Nourishing, balanced and full of colour!
Ingredients
- 1-2 tbsp Olive Oil
- 500 g Store bought gnocchi
- 1 Large Zucchini, quartered and sliced
- 2 Peppers, diced
- 250 g Cherry tomatoes, halved
- 3 Shallots, sliced
- 5 Garlic cloves, thinly sliced
- 1/4 Cup Feiges Maple Balsamic & Garlic dressing
- 1 Lemon, halved
- Salt & Pepper
- 100 g Goat cheese
- 1/2 Cup Herbs (mint, parsley, basil or dill)
Instructions
- Preheat oven to 450FDrizzle large sheet pan with olive oil, addgnocchi, zucchini, pepper, half of the cherry tomatoes, shallots and garlicCover gnocchi and vegetables with dressing, juicefrom half of a lemon, salt and pepper.Toss together until coated evenly.Sprinkle goat cheese over topBake for 30 Minutes until vegetables are roastedBroil for a minute or two to crisp up gnocchiSprinkle herbs, reserved tomatoes and more lemonjuice over gnocchiServe immediately
