Marinated Tomatoes
Ingredients
- 2 tbsps. fresh thyme
- 1/4 cup fresh basil, chopped and extra for garnish
- 3 large tomatoes, sliced about 1/4 inch
- 250 mL mini bocconcini cheese, sliced
- Fresh grated parmesan cheese (optional)
- 1/4 - 1/3 cup Feige's Oil and Vinegar
Instructions
- Place sliced tomatoes in single layer and evenly sprinkle both sides with fresh herbs and salt and pepper.
- Cover and let stand for one hour in the fridge.
- Drain any juice and top with bocconcini and parmesan.
- Drizzle with Feige's Oil and Vinegar and garnish with more basil.
